2 Minute Anti-Inflammatory Peach Crumble


2 Minute Peach Crumble
Equipment
- 1 Microwave safe bowl
- 1 Small mixing bowl
Ingredients
Peach filling
- 1 Ripe peach, diced
- 1 tsp Pure maple syrup
- 1/2 tsp Ground cinnamon
- 1 tsp Lemon juice (this helps bring out the flavor of the peach but if you don't have it just skip it)
- 1 scoop Collagen peptides-optional but helps with blood sugar stability
Crumble
- 3 tbsp Oat flour
- 3 tbsp Rolled oats
- 2 tsp milk or butter of your choice Milk makes a more toasted crumble, butter makes a more soft liquid crumble
- 2 tsp Pure maple syrup
Optional toppings
- Coconut whipped cream, dairy free ice cream or yogurt
Instructions
- In a microwave safe bowl combine the diced peaches, maple syrup, cinnamon, lemon juice and collagen (if using).
- Microwave for 60-90 seconds until soft
- While the filling is cooking make the crumble
- In a small bowl combine the oats, oat flour, milk and maple syrup
- Crumble or spoon the crumble over the top of the peach. Microwave for about 30 seconds until it's cooked through
- Let cool before adding toppings
