2 Minute Peach Crumble

Equipment

  • 1 Microwave safe bowl
  • 1 Small mixing bowl

Ingredients

Peach filling

  • 1 Ripe peach, diced
  • 1 tsp Pure maple syrup
  • 1/2 tsp Ground cinnamon
  • 1 tsp Lemon juice (this helps bring out the flavor of the peach but if you don't have it just skip it)
  • 1 scoop Collagen peptides-optional but helps with blood sugar stability

Crumble

  • 3 tbsp Oat flour
  • 3 tbsp Rolled oats
  • 2 tsp milk or butter of your choice Milk makes a more toasted crumble, butter makes a more soft liquid crumble
  • 2 tsp Pure maple syrup

Optional toppings

  • Coconut whipped cream, dairy free ice cream or yogurt

Instructions

  • In a microwave safe bowl combine the diced peaches, maple syrup, cinnamon, lemon juice and collagen (if using).
  • Microwave for 60-90 seconds until soft
  • While the filling is cooking make the crumble
  • In a small bowl combine the oats, oat flour, milk and maple syrup
  • Crumble or spoon the crumble over the top of the peach. Microwave for about 30 seconds until it's cooked through
  • Let cool before adding toppings
