Blood Sugar Stable Peach & Blueberry Oatmeal Bites

Equipment

  • 1 Muffin tray
  • 12 Parchment cups or silicone muffin cups
  • 2 Mixing bowls

Ingredients

Dry Ingredients

  • 2 C Old fashioned oats, gluten free *If you want more of a muffin texture use 1 C old fashion oats and 1 C oat flour
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/4 tsp Salt
  • 2 Scoops Collagen peptides
  • 3/4 C Diced peach, ripe (about 1 peach)
  • 3/4 C Fresh blueberries

Wet Ingredients

  • 1/2 C Granola butter, sunflower butter or nut butter *If you butter it hard or dry microwave it to make it more pliable before mixing with other ingredients
  • 2 Eggs *Flax eggs won't work I tried it.
  • 2 tbsp Coconut oil or avocado oil
  • 3/4 C Dairy free milk of your choice
  • 1 tsp Pure vanilla extract

Toppings (optional)

Instructions

  • Pre heat oven to 350F. Line a muffin pan with parchment or silicone liners
  • In a mixing bowl combine the granola butter, coconut oil, eggs, maple syrup, milk and vanilla
  • In a second bowl combine the oats, baking powder, cinnamon, salt, collagen, peaches and blueberries.
  • Pour the wet ingredients into the dry and mix well
  • Divide the batter into 12 muffin cups
  • Add additional fruit toppings (optional)
  • Bake for 25-30 minutes if using 2 cups old fashion oats, if using 1 C old fashion and 1 C oat flour for a muffin consistency bake 18-22 minutes
