Blood Sugar Stable Peach & Blueberry Oatmeal Bites
Equipment
- 1 Muffin tray
- 12 Parchment cups or silicone muffin cups
- 2 Mixing bowls
Ingredients
Dry Ingredients
- 2 C Old fashioned oats, gluten free *If you want more of a muffin texture use 1 C old fashion oats and 1 C oat flour
- 1 tsp Baking powder
- 1 tsp Cinnamon
- 1/4 tsp Salt
- 2 Scoops Collagen peptides
- 3/4 C Diced peach, ripe (about 1 peach)
- 3/4 C Fresh blueberries
Wet Ingredients
- 1/2 C Granola butter, sunflower butter or nut butter *If you butter it hard or dry microwave it to make it more pliable before mixing with other ingredients
- 2 Eggs *Flax eggs won't work I tried it.
- 2 tbsp Coconut oil or avocado oil
- 3/4 C Dairy free milk of your choice
- 1 tsp Pure vanilla extract
Toppings (optional)
Instructions
- Pre heat oven to 350F. Line a muffin pan with parchment or silicone liners
- In a mixing bowl combine the granola butter, coconut oil, eggs, maple syrup, milk and vanilla
- In a second bowl combine the oats, baking powder, cinnamon, salt, collagen, peaches and blueberries.
- Pour the wet ingredients into the dry and mix well
- Divide the batter into 12 muffin cups
- Add additional fruit toppings (optional)
- Bake for 25-30 minutes if using 2 cups old fashion oats, if using 1 C old fashion and 1 C oat flour for a muffin consistency bake 18-22 minutes
