Buffalo Chicken Smash Tacos
Ingredients (makes 6–8 tacos):
1 lb ground chicken 6–8 small tortillas (flour, cassava, or gluten-free)
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika
½ tsp sea salt
¼ cup Buffalo sauce (like Primal Kitchen)
Optional: 1–2 Tbsp dairy-free cream cheese or coconut yogurt (for richness) Avocado oil or olive oil spray (for cooking)
Instructions:
Mix: In a bowl, combine ground chicken with garlic powder, onion powder, paprika, and salt.
Smash: Divide into 6–8 balls. Place each one on a tortilla, then smash flat with your hand or the bottom of a glass until it spreads close to the edges.
Cook face-down: Heat a pan over medium heat. Place the taco chicken side down and cook for ~4–5 minutes until golden and cooked through.
Flip & crisp: Flip and cook the tortilla side for ~1–2 more minutes until slightly crispy.
Buffalo it: Remove from heat, drizzle or brush with buffalo sauce (mix in dairy-free cream cheese or yogurt if desired for creamy version).
🥬 Creamy Ranch Slaw
Ingredients:
2 cups shredded cabbage or coleslaw mix
½ cup shredded carrots
2 Tbsp chopped green onions or chives
¼ cup dairy-free ranch (like Primal Kitchen-has egg)
1 tsp apple cider vinegar
Salt + pepper to taste
Instructions:
Toss all ingredients in a large bowl until evenly coated. Let sit 5–10 min to soften and marinate.
