High Protein Avocado Toast


High Protein Avocado Toast
Equipment
- 1 Toaster optional
- 1 Food processor
Ingredients
- 1 Slice Sourdough bread or bread of your choice
- 1 Small, ripe avocado
- 1 C White beans, drained and rinsed
- 2 tsp Olive oil
- 1 tbsp Lemon juice
- 2 Eggs, cooked the way you like them
- 1 tbsp Hemp seeds
- 2-3 tbsp Pickled red onions (optional but great for the gut, a good substitute would be sauerkraut)
- 1-2` tbsp Sliced green onions
- Sprinkle salt & Pepper
Instructions
- In a food processor combine the avocado, beans, olive oil and lemon juice. Just until combined it doesn't have to be completely smooth
- Toast the bread
- Cook your eggs as desired
- Spread the avocado bean mixture on the toast, layer with hemp seeds, pickled onions, eggs, green onion and salt and pepper
