Lemon & Honey Garlic Chicken

(haven’t tried gluten free flour yet but I do think gluten free all-purpose flour would work)
*Also lemon pepper seasoning typically has mustard in it if you have a mustard allergy be aware. You could also omit the seasoning and create your own with equal parts black pepper, celery seed, oregano and basil with lemon essence
Ingredients:
1lb chicken breast, cut into halves or thirds depending on how large they are
1/4 C flour
1/2 tsp salt
1 tsp lemon pepper seasoning, salt free
1 tsp paprika
3 tbsp olive oil
Lemon & Garlic Honey Sauce:
1 tbsp fresh minced garlic
1/3 C honey
1 tsp soy sauce
1/4 C Fresh squeezed lemon juice
1 lemon zested
*Optional garnish Parsley and lemon wedge
*Optional side dish: Rice, Cauliflower rice, Quinoa, Vegetables (I made roasted carrots but my son thought they were carrot fries and ate them before I could plate it)
Directions: Makes 4 servings
1. In a small bowl mix all the flour, salt, lemon pepper seasoning and paprika.
2. In a second bowl mix the honey, garlic, soy sauce, lemon zest and lemon juice.
3. In a skillet heat the olive oil on medium high. Dredge the chicken through the flour mixtures until completely coated and add the chicken to the pan.
4. Sear both sides of the chicken. If you need to add extra oil or lower the heat that’s ok. You want the chicken to cook through completely without burning. It should be about 8 minutes per side or until the internal temp is 165F (note: the large the pieces the longer it takes, smaller pieces may cook faster)
5. Pour the lemon & garlic honey sauce over the chicken and simmer for a few minutes so the coating caramelizes on the chicken. Remove from the heat and serve!
