Pre heat oven to 400F. Remove you puff pastry from the box so it can come up to room temperature
Heat the meatballs as directed on the package
Place the first sheet of puff pastry over the 6 muffin cups. Push the pastry down into the cups. The goal is have extra puff pastry on all sides this is how we'll seal the the sandwiches
Place 2 meatballs into each muffin cup
1-2 tbsp of sauce into each muffin cup
Sprinkle about 1 tbsp of cheese into each muffin cup
Layer the second sheet of puff pastry on top. Using your pizza cutter or sharp knife cute squares around each muffin cup. With your fingers push down all the edges so they fuse together. You can also use a fork for this step if you like
Poke holes into the top of the pastries
Lightly brush oil on the top of each pastry this helps it brown and crispy and also helps with re-heating
Bake for 24 minutes and then spin the tray around and bake another 3-4 minutes until all the puff pastry is golden brown
Allow the sandwiches to cool before serving. If you're preparing these for the day before let the pastries cool completely! (this i essential otherwise they'll hold develop condensation and become soggy) After they're cook put them in an air tight container. To re-heat in the morning for lunch box pop them in the toasted oven at 350F for 8-12 minutes OR in the air fryer at 325F for 5-7 minutes
