Scoop-able Salad • Protein Edition

1 English cucumber, diced
1 C Mandarin oranges, diced
1/2-3/4 C Pomegranate seeds
7 oz Firm tofu, cubed
1 tbsp Fresh mint, diced
1/2 Lemon juice
1 tbsp Honey
1 tbsp Pickled red onion, diced
Salt & pepper to taste
1 tbsp Olive oil
Directions:
1. Diced your tofu into small cubes. In a pan heat the olive oil and add the tofu. Season with salt and pepper. Cook until the tofu has browned
2. While the tofu is cooking dice all your vegetables.
3. In a large bowl combine all the ingredients and mix well. Serve with chips or eat with a spoon!
