Make Ahead Protein Pancakes

*This recipe is dairy free.
*To make it vegan you can use flax eggs but the batter doesn’t rise as much so you’ll need to keep checking if the pancake is done

Ingredients: Makes 6 servings
1 1/4 C All purpose flour
2 large eggs
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/4 C Oat milk, or milk of your choice
1/2 C Blueberries
1/2 C Raspberries
1/2 C Diced strawberries
2 scoops protein powder
*Optional vegan greek yogurt to serve with it and add extra protein

Directions:
1. Preheat oven to 375F. Grease or line a deep 8×8 pan (the one I used linked here)
2. In a large mixing combine the flour, baking soda, baking powder, salt and protein powder.
3. In a small bowl whisk the milk and eggs together
4. Pour the egg mixture into the flour and mix until combined. Don’t over mix the batter. Let the batter sit for 10 minutes
5. Fold the berries into the mixture. Pour the batter into the baking pan and bake for 25-28 minutes
