Sticky-Savory Sheet Pan Chicken

Ingredients: Makes 4 servings
1 1/2 lbs chicken thighs, skinless and boneless
1 bunch asparagus
1 red bell pepper, chopped
1 red onion, chopped
Sauce:
1/4 C Tamari
3 tbsp honey
2 tbsp rice vinegar
2 tbsp toasted sesame oil or oil of your choice
1 tbsp Olive oil (or oil used above)
1 tbsp grated fresh ginger
2 cloves garlic, minced
Optional- 1-2 tbsp red chili pepper sauce (sambal olek) if you like it spicy
Optional garnish: green onion, basil, mint, cilantro all chopped and combined together then sprinkled on top before serving
Directions:
- Preheat oven to 425F. Line a large baking sheet with parchment paper
- Prepare the sauce by mixing all the ingredients.
- In a separate bowl put the chicken and half the sauce. Allow the chicken to marinate while you chop the veggies
- After it’s done marinating spread the chicken out on the baking pan and bake for 15 minutes
- After 15 minutes add the vegetables and bake another 15 minutes
- Serve with the extra sauce on the side and optional toppings
