Sticky-Savory Sheet Pan Chicken

Ingredients: Makes 4 servings

1 1/2 lbs chicken thighs, skinless and boneless

1 bunch asparagus

1 red bell pepper, chopped

1 red onion, chopped

Sauce:

1/4 C Tamari

3 tbsp honey

2 tbsp rice vinegar

2 tbsp toasted sesame oil or oil of your choice

1 tbsp Olive oil (or oil used above)

1 tbsp grated fresh ginger

2 cloves garlic, minced

Optional- 1-2 tbsp red chili pepper sauce (sambal olek) if you like it spicy

Optional garnish: green onion, basil, mint, cilantro all chopped and combined together then sprinkled on top before serving

Directions:

  1. Preheat oven to 425F. Line a large baking sheet with parchment paper
  2. Prepare the sauce by mixing all the ingredients.
  3. In a separate bowl put the chicken and half the sauce. Allow the chicken to marinate while you chop the veggies
  4. After it’s done marinating spread the chicken out on the baking pan and bake for 15 minutes
  5. After 15 minutes add the vegetables and bake another 15 minutes
  6. Serve with the extra sauce on the side and optional toppings
