Carrot Detox Salad
Equipment
- 1 Peeler
- 1 Large mixing bowl
- 1 Small mixing bowl
Ingredients
For the salad
- 4 Large Carrots, singlue color or multi-colored
- 1 Large English Cucumber
- 2-3 tbsp Fresh cilantro chopped
- Optional add-ins: Avocado, scallions, sesame seeds, peanuts, cashews, edamame, pomegranate aerils, mandarin oranges
For the Dressing
- 2 tbsp Tamari or coconut aminos or low sodium soy sauce
- 1 tbsp Rice vinegar
- 1 tbsp Fresh lime juice
- 1 tsp Fresh grated ginger
- 1 tsp Honey
- 1 tsp Sesame oil *optional
- 1 tbsp Avocado oil or Olive oil
- 1 small Clove garlic. minced
- 1 tsp Water, to thin it out a little bit
Instructions
- In a small mixing bowl combine all your dressing ingredients and set it aside – essential that this is done first for the best flavor
- Wash your vegetables and peel the first layer of the carrots off. Use the peeler to make long strips of each vegetable.
- In a large bowl combine the carrots, cucumber and cilantro. Pour the dressing over the top and serve! (if serving at a later time or meal prepping store the dressing separately)
